Cuisine

The cuisine of Goa has been strongly influenced by the two predominant religious cultures in Goa. The original Hindu culture of the land and Christianity, which was brought in by the Portuguese occupation of the state. The Portuguese also brought in technology of using vinegar for cooking and preservation of meats and other foods. Introduced Wine making and the consumption of beef and pork into a culture which is mostly vegetarian or seafood living. The Hindu influenced cuisine uses local produce like 'kokum' dried sour plums, tomatoes, and tamarind to add the tang to food where as Portuguese influenced cuisine uses vinegar made from fermented and matured coconut tree sap. Coconut is predominantly used in making curries (gravies) and other foods in both.
